Blue Plate Mondays - Favorite Meatloaf
Comfort food and traditional flavors are always welcome in my home. One favorite meal is meatloaf and potatoes. I believe the recipe was originally found on the stuffing box. Over the next couple of weeks, I will also share the recipes for the make ahead smashed potatoes and the cranberry salad. This is good - maybe not the meatloaf you remember. It is a simple and flavorful dish that reminds you of the corner diner blue plate special. Enjoy.
2 pounds ground round or ground turkey
3 cups seasoned stuffing mix
2 eggs, beaten
1/2-3/4 cup BBQ sauce (I like KC Masterpiece Honey BBQ)
1 cup water
Mix meat, stuffing mix, 1 cup of water, eggs, and 1/4 cup of the BBQ sauce. Shape meat mixture into an oval loaf in a 9 X 13 baking dish; top with remaining BBQ sauce.
Bake at 375* for one hour or until center is no longer pink.
