Do You Know The Muffin Girl?

Libby’s favorite muffin is Clabber Girl’s Doughnut Muffins. These muffins are quick and delicious and easy to make even on a school morning.

I like the nutmeg and cinnamon spiciness of these muffins and the dot of butter on top of each gives the muffins crispy, crunchy tops just like the outside of a sugar doughnut. Yummy!

Doughnut Muffins (makes one dozen)

1 egg
1/3 C vegetable oil
½ C milk
½ C flour
½ C sugar
2 t baking powder
½ t salt
½ t nutmeg

2 T sugar
1 t cinnamon

Preheat oven to 400 degrees. Grease a favorite muffin tin.

In a mixing bowl, beat egg with a fork. Add oil and milk and continue beating. Set aside. In a separate bowl, sift together flour, sugar, baking powder, salt, and nutmeg. Add to oil, egg and milk mixture; stir with a fork very lightly.

Turn into prepared muffin tin.

Mix together 3 T sugar and the cinnamon (I used my sugar and cinnamon shaker). Sprinkle sugar and cinnamon mixture on top of batter. Put a dot of butter on each muffin.

Bake for 20 minutes.
